The Hillsborough Cheese Company
For Dorian and Cindy West, sharing their love of fromage began as they travelled Paris in 90s. Tasting their way through the City of Light, they began to wonder how to bring the exquisite tastes home. Fast forward to the 2004… a Gran Diplomate from Le Cordon Bleu, Cindy began crafting cheese in a small space adjacent to her parents old tobacco farm in Hillsborough. Gruyere, manchego, blue, tomme, gouda, fresh chevre, farmer’s cheese… all locally made with farmer’s cow and goat’s milk, raised right in Orange County.
Today, Dorian, Cindy and their children all lend a hand to turn out boutique cheeses that are featured in local farmers markets, including Eno River Farmers’ Market, Downtown Raleigh Farmer’s Market and Western Wake Farmers’ Market. If you’re fine-dining locally, you’ll find their cheese gracing your plate at Blue Corn Cafe, Posta Tuscan Grille and Bin 54 in Chapel Hill, to name a few.
Cheese, often seen as a guilty pleasure, is high in calcium and high in phosphate – agents that help strengthen and replace enamel in your teeth. There is also research to suggest cheese also has anti-cavity properties1, which leaves lots of reasons to enjoy a generous slice next time you see the Hillsborough Cheese family at your local farmers market.
